Today I want to talk about our favorite brewing method in Cuela Coffee Shop. The brewing method we use is the Kalita Wave. This method was created by Kalita company in 2010. There are various methods for making coffee, such as: Moka pot, Espresso, Chemex, V60, Clever, Origami, and Siphon, among others, but at Cuela we opted for the Kalita filter method.
The thing that we like the most in this method is the aesthetic. This method is made of plastic, copper, and aluminum. The differences lie in the consistency of heat retention. Copper and aluminum contribute more to this consistency. In this type of method the temperature is very important for a consistent brew.

The other aspect we really like is the bottom of the Kalita. The flat bottom helps with a more even distribution of the coffee. This facilitates the process of wetting all the coffee particles, ensuring a balanced cup in their attributes of sweetness, acidity, and bitterness. There are other methods like the V60 that are very good, but there conical end, makes it more difficult to ensure the wetting of the coffee and this could lead to over-extraction.
Finally, it's an easy method to replicate in terms of the recipe. The biggest advantage is how simple it is to wet the grounds. This gives it a significant advantage over other drip brewing methods that are conical.
